One-Pot Penne Meatballs

Ingredients

1 tablespoon extra-virgin olive oil
140g low FODMAP meatballs
2 cups low FODMAP chicken stock
1 cup water
400g jar low FODMAP tomato passata
250g low FODMAP pasta spirals
3 handfuls fresh spinach
1/2 cup grated parmesan, plus extra to serve
4 large bocconcini balls, quartered

Directions

1.

Heat olive oil in a large saucepan or frying pan (with lid) over medium-high heat. Brown meatballs on all sides.

Add stock, water, passata and pasta spirals to the pan. Bring to the boil, cover and reduce heat to medium. Simmer until pasta is cooked, about 15 minutes.

Remove from heat, stir through spinach, parmesan and bocconcini. Divide between 4 bowls and serve immediately.
