1.6 Kg whole snapper, scaled and cleaned salt and pepper | |
2 tomatoes, diced | |
1 small lemon, sliced into rounds | |
3 spring onions, green part only, roughly chopped | |
handful lemon thyme leaves | |
olive oil | |
5 large potatoes, peeled and cut into bite-sized pieces |
Directions

Preheat oven to 180°C.

Place a large sheet of aluminium foil (enough to enclose fish) in the base of a large baking dish. Lay fish on top. Score the fish with two or three deep cuts on either side.

Season fish cavity with salt and pepper, then place tomatoes, lemon slices, spring onions and lemon thyme inside.

Drizzle with olive oil, then secure foil around the fish.

Arrange potatoes around fish and drizzle with some more oil. Bake in preheated oven for 50 minutes or until fish flesh flakes easily with a fork and potatoes are golden and cooked through.
