Quick Orange Chicken - Low FODMAP and Gluten-Free

Ingredients

  • 1 tablespoon garlic-infused olive oil
  • 4 skinless chicken breasts, halved lengthwise
  • 1 cup low FODMAP chicken stock
  • 1 tablespoon thyme, chopped
  • 4 tablespoons orange marmalade
  • Steamed rice, to serve

Instructions

    1. Heat oil in a large frying pan over medium heat. Add chicken and cook for 7 minutes on each side, or until golden brown and cooked through.
    2. While chicken is cooking combine remaining ingredients in a jug.
    3. Remove chicken from pan. Keeping heat at medium, pour contents of jug into pan and bring to boil.
    4. Reduce heat to low and add chicken. Toss to coat. Serve your quick orange chicken with steamed rice and your favourite low FODMAP vegetables.
